Known and loved for offering dishes made with the freshest ingredients, Chef Paolo has enhanced the restaurant’s menu by introducing a range of popular Mediterranean classics with an Italian twist, in homage to Chef Paolo’s Italian heritage. From Boardwalk’s striking fresh seafood display, guests can enjoy raw dishes such as Scallop Crudo, topped with fennel and pink pepper; Salmon Carpaccio with crispy fregola and black garlic vinaigrette; Yellow Fin Tuna Tartare with avocado puree, capers and crispy shallots, and more.
Diners can expect mouthwatering starters including Barrel Aged Unsalted Feta Cheese with heirloom tomato and focaccia croutons; Vitello Tonnato of slow cooked veal loin, tonnato espuma, soft poached quail eggs and fried capers; Oven Baked French Brie with black winter truffles; Gran Fritto Misto of crispy soft-shell crab, prawns, anchovies, calamari, zucchini and aioli.
