Rational launches new combi-steamer accessory for cooking by smoking

Rational has launched a new product, the VarioSmoker.

An ancient, but complex, method of preserving food and bringing out new flavours thanks to intelligent kitchen equipment, smoking is much easier and more reliable today, say Rational experts.

For example, the new VarioSmoker from Rational, which was developed for the new iCombi Pro combi-steamer. The VarioSmoker is simply connected to the cooking system via USB, started via an on/off switch and controlled via intelligent cooking paths. The result: smoke enhanced-food with an individual touch.

“Fish, meat and vegetables are cooked and smoked simultaneously with the VarioSmoker. And get a very special taste”, says Thomas Hofer, Managing Director RATIONAL Kitchen & Catering Equipment Trading FZCO.

After connecting the VarioSmoker to the iCombi Pro, the cooking paths are displayed in the iCookingSuite, the cooking intelligence of the combi-steamer. The intensity and flavour of the products can be influenced by selecting individual pre-smoking steps.

All common smoking materials such as wood chips or pellets can be placed in the smoking box. Aroma and intensity are determined through a combination of the selection of smoking materials, the temperature in the cooking chamber and the preparation of the raw materials.

The iCombi Pro then takes responsibility for the individual, desired result. It also takes care of cleaning with the iCareSystem, the programme that removes all traces, including the intense smoking scent.

After use, the smoking box can be hung on the space-saving holder supplied. In addition, the holder is flexible, and so it can always be attached at the right height. The VarioSmoker can also be used in all Rational combi-steamers from 1997 onwards, but in manual mode.
